Ingredients

1 pound of shrimp

2 tablespoons lemon juice

2 tablespoons olive oil

1 tablespoon lemon zest

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon black pepper

1 teaspoon salt


Step 1: Prep the Shrimp

In a bowl, combine the olive oil, lemon juice, lemon zest, garlic powder, onion powder, black pepper, and salt. Toss the shrimp in this mixture until evenly coated. For best results, let it marinate for about 15-30 minutes.


Step 2: Skewer the Shrimp

Skewer the shrimp horizontally so it skewers multiple places per shrimp. Create a shrimp-kabob with the skewer.


Step 3: Cook

Place the roaster and skewer over the fire and cook for approximately 3 minutes per side. Alternatively, rotate the skewer continuously to most evenly cook the shrimp. Cook until the shrimp has some char and is fully cooked.


Step 4: Serve and Enjoy

Garnish with chopped fresh parsley if desired, and serve the shrimp hot from the roaster.
